Summer Breakfast – Maple Yogurt with homemade muesli
Now that summer has arrived and many of us have vacation, we have more time to eat a late breakfast and prepare something different than the usual piece of toast and a glas of juice. The next few weeks I will be posting some recipes that are good for a breakfast or maybe even for a brunch combined with other recipes I will be writing about. . One should always kick start a day with protein after a long night sleep. Yoghurt has a good deal protein and can be prepared many different ways. Here is one of my favorite.
Maple Yoghurt with homemade muesli Serves 2
2 oz. hazelnuts, crushed slightly,3 tbsp. honey, 1½ cups Greek yoghurt, 2 tbsp. maple sirup, 2 oz. dried cranberries
Toast the nuts until golden in the honey. Set them aside.
Place yoghurt and 2 tbsp. of honey in a bowl and mix well. Spoon into glasses or bowls then top with muesli and cranberries. Drizzle over remaining honey. Serves 2.
