Red Beet Tartare

Either you love them or you hate them, red beets . The Danes love red beets (most of them) and use them in soups, grated, in salads, cooked like other root vegetables,  baked, and made to juice. The most popular way to eat red beets is to perserve dem. They are filled with lots of nutrition such as fiber, C-vitamin and iron,  We can buy them fresh in August and until the frost comes. Then we preserve them and use them as garnish, salads and to make a Red Beet Tartare. In this recipe anchovies are chopped with the preserved beets and garnished like a beef tartare.

Red Beet Tartare  Serves 4

8 small anchovies, 8 slices of preserved red beets, 4 pasteurized egg yolks, 1 tbsp. capers, 1 tbsp. finely, chopped onion, 4 tsp. grated horseradish, 4 slices of buttered rye bread

To make the sandwich,  chop anchovies and red beets with a sharp knive and mix them well. Place red beet mixture on  slices of buttered rye bread. Divide chopped onions, capers and horseradish among the four slices of bread.   Make a place in the center of each sandwich and place an egg yolk in it’s shell here.
