Oysters with Horserasdish Cream Dressing

Soon it is New Year’s Eve and many people will be eating oysters. At least they would like to but can’t open the oysters. If you are having guests and the thought of opening 30 or 40 oysters, here is a way to do it quickly. Oysters are supposed to be alive when you buy them and as soon as you open them, they die. An easy way to open oysters for a crowd is by putting them in the microwave oven and give them a 30-40  seconds with a high heat.  Be sure and have the dressing ready and in a matter of minutes the oysters are on the table. Here is a different and delicious way to serve Oysters.dsc_0003-4























Oysters with Horseradish Cream Dressing

1 cup of heavy cream, beaten, juice of a lemon, 1-2 tbsp. prepared horseradish dressing or freshly grated horseradish, 30-40 oysters

To make the dressing, whisk cream, lemon juice and horseradish cream in a bowl.

To open the oysters, place 30 or 40 oysters in the microwave oven. It is okay to place them on top of each other. Give them 30-40 seconds with high heat and they will open. Remove the oysters from the shells, save the juice and place the oyster back in the half shell. Place the oysters in the shells on a platter (ice is not needed)

To serve, add a little of the oysters juice if the dressing is a little stiff. Not too much, it shouldn’t be runny. Place and tablespoon of dressing on half of the oysters leaving half free for those who want to use lemon or Tabasco sauce. Serve immediately. Place the rest of the dressing in a small bowl and set it on the table. Each guest can take more if they wish.
