Open-face Sandwich with Avocado and Egg Salad

As I wrote earlier this week, we will be eating a lot of eggs in the next few days  because of Easter. And why not. Eggs are the perfect food with all the vitamins and mineral we need for a healthy life. It has anything except C vitamin. If you eat eggs with avocado,  which has lots of vitamins, including C vitamin and some lime which has even more C vitamin, you will have the perfect lunch. One sandwich can be very filling.
















Open-face Sandwich with Avocado and Egg Salad Serves 4

3 hard-boiled eggs, peeled

3 tbsp. mayonnaise

½ tsk. curry

salt and pepper

2 avocados

juice a lime

4 slices of sandwich bread

garnish: lime wedges

To make the egg salad,  chop the eggs with a knife and combine with mayonnaise, curry and salt and pepper.

To assemble, peel the avocados and slice into wedges. Sprinkle avocado slices with the juice of a lime. Place avocados decoratively on slices of bread. Place 2-3 tbsp. of egg salad on top of the avocadoes.
