Open-face Sandwich with Smoked Cheese Salad

This  open-face sandwich, smørrebrød, is an all-time favorite of the Danes. Unfortunately, Denmark is one of the only places in the world to get smoked cheese. It can be made at home if you have the time. It is buttermilk that gets warmed over an open fire and when it is skilt, it gets poured into a strainer. Press any  fluid and place the strainer over an open fire where they is places a lot  hey. Like I said, it is possible to make this cheese at home, but I doubt if many people do. Anyway, it makes a wonderful smoked cheese.and if you add radishes, cucumbersSmoke and chives, it makes a great salad that can be eaten on rye bread.

 

 

 

 

 

 

 

 

 

 

 

 

Smoked Cheese Salad Smørrebrød serves 4

1 cup of smoked cheese or 1 cup of cottage cheese

5 radishes, chopped

1/4 of a cucumber, diced

5-6 chives, chopped

4 slices of rye bread

Garnish: 3-4 cherry tomater, sliced in wedges, more chives

To make the salad, combine the cheese, radishes, cucumber, and  chives.

To assemble, spred a 1/4 of the cheese mixture on each piece of  rye bread. Garnish with cherry tomato wedges and chives.
