Raw Salmon with Lime, Horseradish and Ramsons

As I have written so many times before, the Danes eat Salmon in all kinds of versions. This one is good as an appetizer. It is raw with a dressing of lime, horseradish and ramsons.  If you don’t have ramsons, chives or another herb can be used. Don’t let the dressing stay to long on the salmon or it will start to “cook” the fish and the dressing will change the struture and color



















Raw Salmon with Lime, Horseradish and Ramsons Serves 4

1½ lb. salmon with skin

2 tbsp. water

Zest and juice of a lime

2 tbps. freshly grated horseradish

1 tbsp. rapeseed oil

1 tbsp. sugar

1 tbsp. salt

freshly ground white pepper

Garnish:7-8  ramson leaves, chopped or  chives

To make the salmon, remove all bones and slice thin slices diagonally across the grain and place them on a large platter.

To make the dressing, whisk water, zest of lime and juice, horseradish, oil, sugar, salt and pepper. Pour dressing over salmon and let it stand five minutes . Sprinkle with chopped ramson leaves or chives.

Suggested accompaniment: toast brød but you can serve any kind of bread you like.
