Grilled Shrimp Salad with Caramelized Garlic, Feta and Olives
When I first came to Denmark many years ago, the Danes where not grilling. After a while, they started to grill but would take their food indoors. Now, almost everyone in Denmark owns a grill and when the weather is right, all the meals are both prepared outdoors and eaten outdoors. Grill is a good way to gather friends and family and celebrate the warm long summer nights.
Grilled Shrimp with Feta and Caramelized Garlic Serves 4
3 oz. mixed salad (romaine, radicchio etc).
3 oz. feta, crumbled
8 large olives
2 oz. cherry tomater
10-12 gloves garlic
½ cup white wine
2 tbsp. sugar
1 tbsp. butter
1 tbsp. apple cider vinegar
3 tbsp. rapeseed oil
1 tsp. salt
freshly ground black pepper
8 large shrimps
salt and freshly ground pepper
To make the garlic, cook the peeled garlic in wine, sugar and butter over low heat indtil the liquid is thick as sirup and the garlic cloves are soft, 10 min. Save the sirup.
Bland the ingredients to the salad and set aside.
Warm the grill and grill the shrimps over direct heat appox. a minute on each side.
To serve, place the shrimps on top of the salad, pour the dressing over,, arrange the garlic on top and pour the warm sirup over. Serve with salt and coarsely ground pepper straight from the mill.
Suggested accompaniment; crusty bread and lots of it to wipe up the garlic sirup.
