Balsamic Strawberries with Vanilla Crème

Strawberries for dessert is always a hit with both young and old. Now that is it summer, we should eat as many as we can. The season in Denmark is short and although we can buy strawberries from other countries, we Danes believe our strawberries are the best because of the cool temperature and long summer nights.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Balsamic Strawberries with Vanilla Crème 

Serves 4

Balsamic sirup:

½ cup balsamic vinegar

2 tsp. sugar

1 tsp. lemon juice

1½ lb. fresh  strawberries, hulled and halved

2-3 tbsp. sugar

Crème:

2 egg yolks

1 tbsp. sugar

3/4 cup/6 fl. oz. milk

2 tsp. flour

½ tsp. vanilla extract

To make strawberries, mix vinegar, sugar and lemon juice in a small pot. Bring to a boil and let the mixture simmer 3 minutes. Pour the sirup into a small bowl, cover and set in the refrigerator until it should be used. Can be made two ahead.

Mix the strawberries with sugar and the balsamic sirup.   Let them stand at least 30 minutes. Stir once in awhile.

To make vanilla crème, beat egg yolk with sugar, flour and milk. Cook over low heat while beating the whole time until thick. Remove from the heat and add vanilla extract: then cool, stirring occasionally.

To serve, divide the strawberries in four bowls. Place a large spoonful of vanilla crème over.  Enjoy!
