Meringue Baskets with Summer Fruit

Summer is here and fruit is filling the markets. Weekend is here and many will be having guests. Here is an easy and super delicious dessets. The baskets can be made the day before and it takes just minutes to arrange with fruit and a spoonful of whipped cream.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Meringue Baskets with Summer Fruit  Serves 8

3 egg whites

1 cup sugar (180 grams)

1 lbs. fruit, such as strawberries, blueberries, blackberries, whatever is in season such as peaches, grapes cut into smaller pieces

2 cups whipping cream, whipped

 

Preheat the oven to 200°F.

To make merinque, pisk the egg whites stive. Add 2 tsp. sugar at a time, until the eggs whites are stiv. Fill a pastry bag and pipe 8 circles of merinque on a baking sheet covered with baking paper. Pipe another circle on top of the 8 merinque circles. Bake them 1 hour. Take them up and let them cool completely.

To serve, place the berries and fruit in the baskets and place a large spoonful of whipped cream on top.
