Pan-Fried Cod with a Crust of Panko (Breadcrumbs) and Mushrooms, Parsley Oil and Smoked Cream

This recipe has serveval steps and may seem difficult. Let me assure you that it is not, It can be made in less than a half of an hour. The timing is the most important thing. Start with  parsley oil. It can take a long time to drip though the sieve if you don’t help it. Next the smoked cream takes about 15 minutes to soak  so the bacon taste infuses with the cream. And yes, there will be  lots of pots and pans, but this dish is really worth it. Be sure and clean up while making the meal. Any firm fish can be used, and any type of mushrooms can be used. Be sure and mince the mushrooms so that it is easy to coat the fish.



















Pan-fried Cod with a Crust of Panko (breadcrumbs) and mushrooms, Parsley Oil and Smoked Cream  Serves 4

Parsley Oil;

1 bunch of parsley

1 cup of corn oil

2 leeks, cleansed and cut into thin rings

Smoked cream: 

3 oz..bacon, minced

1 cup heavy cream

1 tbsp. lemon juice


3 oz. butter

3 oz. panko (breadcrumbs)

1-2 oz.  mushrooms, finely chopped

4 cod: steaks (other firm fish can be used)

To make parsley oil, blend the washed parsley and oil 5 minutes in a blender. Let the oil drain in a sieve linned with a paper towel. This can take time and it helps if you use a spoon to push the oil through the paper towel. In the meantime, fry the leeks in a little butter, Just before serving, pour the parsley oil over.

To make  smoked cream, bring the bacon and cream to a boil. Let it soak for 10 minutes and sieve it,  season with lemon juice and pepper, no salt.

To make crust,  melt half of the butter and “fry” the panko (breadcrumbs) golden. Don’t let them get browned. Take them up and place them on fat-absorbent paper. Transfer them to a plate and mix them with mushrooms.

To make fish, melt the rest of the butter and fry 3-4 minutes depending on how thick they are. Turn the fish in the panko/breadcrumbs mixture.

To serve, place 1 or 2 spoons of  leeks on 4 warmed plates. Place a piece of fish on top of the onions. If making potatoes, pour a little of the smoked cream over the potatoes and pass the rest of the smoked cream at the table.

Suggested accompaniment: boiled new potatoes. It is also nice with mashed potatoes.
