Grilled Giant Mexican Burger

I wrote a few weeks ago that Danes didn’t start to eat burgers until the 1980’s. In fact, Mac Donalds came to Denmark in 1981. They didn’t eat Mexican either. Now, the Danes eat burgers and Mexican food all the time and new variations of burgers  are constantly being composed. Here is a fun burger that will please most people. Many people don’t eat the lid and immediately take the lid off, while others eat everything and want more. Yes, you have to use a knive and a fork to eat this burger. When I came to Denmark many years ago, I thought it was strange to use a knive and fork, but now burgers are so large, they are beginning to use them.

Giant Mexican Burger  Serves 4

1 large round bread

3 oz. soft butter

1 tbsp. chili powder

1 little onion

2 gloves garlic

1½ lb. ground beef

3 tbsp. taco sauce

2 tsp. oregano

1 tsp. cumin

4 slices cheddar cheese

2 avocados

juice of a lime

1 tbsp. olive oil

1 fresh chilipeber )

1 spring onion

1 glove garlic

salt and fresh ground pepper

2 tomater, chopped

6-8 onion rings

8 olives

8 jalapenos slices

To make burger, cut the bread into a top and a bottom. Stir the butter with chili powder and spread on the two pieces of bread. Set them aside.

Prepare the grill.

Chop onion and press garlic and mix with the beef, taco sauce, chili powder, oregano and cumin.  Place meat on a piece of baking paper and form to a large patty a little larger than the bread. With the help of the baking paper, turn the patty out onto the grill. Remove the paper and grill 10-12 minutes. Turn the patty (it helps to have large tools) and place the cheese on the patty. Grill 10-12 minutes on the other side. You can also fry the patty in a large frying pan with a little oil. When turning the patty, place a plate on top of the frying pan and turn the frying pan upside down. Make sure there isn’t a lot a fat in the pan or it will drip down your arms. Slide the patty back into the pan and continue frying.

Toast  bread with the buttered side down, 3-4 minutes on the grill or in the oven.  Place the patty on the bottom halve of the bread.

To make Guacamole, split the avocados and remove the pit and the skin. Mash them together with oil and juice of a lime. Split the chilipepper, remove seeds and chop the chili. Chop spring onions and add them to the guacamole and pressed garlic. Season with salt and pepper. Place the lid next to burger.

To serve, place guacamole, chopped tomatoes, onion rings, black olivesand jalapenos on top of the giant burger.  Let each person cut a slice of the burger. Those who eat a lot can take a large slice and those who don’t eat that much can take a smaller slice.
