GRANDMOTHER’S COOKING IS THE BEST IN THE WORLD

 

Although the Danes have been leading quite a culinary revolution in these past recent years and Copenhagen has become one of the most influential food cites in the world, we are still very fond of grandmother’s cooking. These recipes are still very popular with the Danes and with professional chefs that are beginning to bring them back into the modern kitchen we are all so proud of.

Here is a refreshing summer dish that is always a hit wtth children and adults alike. The soup can be eaten with small cookies that are crushed and sprinkle over the top of the soup. Or, my favorite, it can be eaten with fresh strawberries. We Danes believe that our strawberries are the best in the world, because of the cool, spring and summer nights. It takes longer for our strawberries to ripen, but it makes them more sweet than strawberries in other countries with sunshine all dag long.

BUTTERMILK SOUP WITH STRAWBERRIES  6 dessert servings

2 fresh egg yolks, 3-4 tbs. sugar, 1 Vanilla bean split lengthwise, 1½ quart buttermilk, 3-4 oz. strawberries, hulled, cut lenthwise in halves, depending on size

To make, Whisk  eggs and sugar until smooth. Scrape seeds from Vanilla bean and add to the eggs along with the buttermilk while stirring. Place in the refrigerator until serving.

To serve, divide strawberries into 6 portions and arrange them in bowls. Pour the buttermilk soup into the bowlse.
