SPICY MEATBALLS IN CURRY SAUCE

Spicy meatballs in curry sauce, also known as boller i karry in Danish, may not seem very Danish; neither does ginger, coriander or rice. Never the less, this dish is a very  popular dish with the children of Denmark and their parents. This recipe has been improved over the years and is now considered a reasonable, nutritioust meal to serve for your family. It meets the standard recommendations  of the Danish Ministry of enviroment and food for salt, sugar, fat and fiber. There are many ingriedents, but most of them are things you might have in the house already, Such foods as onions, carrots and apples  and spices such as curry powder, cayenne pepper, bay leaves .make this dish  an inexpensive and delicious meal. If  you make a double portion, you can freeze it.

Spicy  Meatballs in Curry Sauce ( Boller i Karry)

Serves 4

1½ lbs. ground pork and ground veal, ask your butcher to make this one you, 4 tbsp. flour, 1 small onion,grated, 1 inch fresh giner, grated or 1 tsp. ground ginger, 1 tsp. crushed coriander or 1 tsp. ground coriander, 1 tsp. ground cayenne pepper, 2 tsp. salt, 1 cup milk, 1 egg

Cooking liquid: 1 quart water, 1 onion, coarsely chopped, 1 inch fresh ginger, thinly sliced, ½ tsk. salt, 5 whole peppercorns, 5 coriander seeds, 3 bay leaves

Sauce: 1 tbsp. butter, 1 large onion, chopped, 1 tbsp. curry powder, 2-3 medium carrots, peeled, coarsely chopped, 2 tbsp. flour,  3 cups cooking liquid, 2 apples, not peeled, quartered, cored, diced (save some for the garnish)

Combine ground meat with flour,and egg and mix in the onion. Add a little milk at a time. Add salt and pepper. Mix with a fork, don’t use an electric mixer. Lad the mixture rest  for 10 minutes.  Add more  milk if mixture is to firm.

Cooking liquid: Bring water, onion, ginger, salt, peppercorns, coriander seeds and bay leaves to a boil. Reduce heat and let simmer while making meatballs. Dip a spoon into the cooking liquid and aftewards dip spoon into the meat mixture, forming a round ball. Drop meatball into the cooking mixture and let them cook 6-7 minutes. Take meatballs up and let cooking liquid boil until reduced to 3 cups, about 10 minutes.

Sauce :Melt butter in a large heavy pot over high heat. Fry onion and curry powder 1 minute. Add carrots, sprinkle  flour over and stir. Add cooking liquid, diced apple and salt. Bring curry sauce to a boil, reduce heat and let cook over medium heat, 10 minutes or until carrots are tender. Add meatballs and cook a few minutes.

Suggested accompaniment: rice
