BURNING LOVE Brændende kærlighed

I have written about some of the most popular Danish dishes the last two times and now I have to come a dish that is called burning love. Children love this dish and the parents like it because it is inexpensive and easy to make.













BURNING LOVE     serves 4

3 lbs. potatoes, peeled and cut into 1 inch cubes, 1½ cup milk, 1 oz. butter, salt and pepper, 1 lb. lightly salted, smoked lean pork, cut into 21 inch cubes (bacon slices can be used) 2 large onions, chopped,  2 tbsp finely chopped parsley,  pickled red beets, chopped

To make the  potatoes, boil them in unsalted water. Fry pork with fat in a large frying pan. Remove the meat and fry onions in the remaining fat. Mash potatoes and beat in milk and butter until fluffy. Season to taste with salt and pepper.

To serve, place mashed potatoes on a  serving plate and top with pork cubes and onions. Sprinkle with chopped parsley before serving. Serve chopped red beets separately.
