January is one of the coldest months of the year in Denmark and we want to both eat something hot and inexpensive after a Holiday filled with our traditional Christmas food.  We are a .pork eating nation and we have more pigs in Denmark than we have people,, approx. 15 million pigs in Denmark and we are only 5.6 million people. Fried pork with apples is one of the dishes that comes often on the table in January. It’s  an all time favorite, cheap and.quick meal.

Fried Pork with Apples (Æbleflæsk)  serves 4

8 slices bacon or slightly salted pork, 1 onion, coarsely chopped, 2 lbs. cooking apples, quartered, cut into 8 wedges, sugar to taste, 2 tbsp. finely chopped parsley

To make the pork without fat on a hot frying pan until slices are golden brown and tender. Remove them and keep hot in a covered dish. Fry onions in pork fat 1 minute and add apples and fry until they are solf, but not mushy, carefully turn them. Agg sugar to taste when apples and onios are done.

To serve, put apples and onions on a hot dish and arrange slices of pork decoratively on top. Suggesed accompaniment: boiled Potatoes if very hungry or just a slice of bread. .
