Many of the Danish smørrebrød make scrumptious canapies and are good to serve with a glas of white wine or a cocktail. Here are three suggestions. If you want, just scroll down the open-face sandwiches or appetizers to find more suggestions. The first two are so easy. If you like, you can use others found here on my blog. Gravlax would make a good one and so easy if you just buy all the ingredients including the dressing. Another would be smoked salmon with Asparagus (bought in a jar.)
Shrimp with Dill
12 slices of buttered white bread, use a cookie cutter or a glass and cut the bread into smaller portions
6-8 oz. cooked baby shrimp depending on size of bread
Garnish: dill sprigs
To assemble, arrange shrimps decoratively on the bread.
Garnish with dill sprigs.
Smoked Halibut with Capers
4-8 slices of smoked halibut or smoked salmon
12 slices of buttered white or sour dough bread, use a cookie cutter or a glass and cut the bread into smaller portions.
Garnish: capers and sprigs of fennel or dild
To assemble, place 1-2 slices of smoked halibut/smoked salmon on bread. Place a few capers on top of the fish and garnish with the fennel sprigs.
Salt Cured Salmon with Apple and Horseradish Salad
1 2 lb. salmon filet with skin
3 tbsp. fine salt
1 tbsp. sugar
Apple and horseradish Salad:
4 tbsp. rapeseed oil or a natural oil
4 tbsp. apple juice
1 finely chopped shallot
2 tbsp. freshly grated horseradish
1 small apple, quartered, cored and diced
12-20 slices of buttered white bread
Garnish: a handful of fresh herbs, pea tendrils, dill or cress
To make fish, remove all bones and place salmon in deep dish skin side down. Sprinkle with salt and sugar. Cover and refrigerate to the next day.
To make salad, whisk together a marinade of oil, apple juice, shallot, and horseradish in a small bowl. Add diced apple to marinade and toss.
To serve, cut salmon in thick slices diagonally across the grain.
Garnish with pea tendrils, dill or cress.
To assemble, place a slice of salmon on buttered white bread. Spoon apple and horseradish salad on top and garnish with herbs.
