HELLO FROM DENMARK

My name is Lynn Andersen. I am an American, and although I have been living in Denmark for many years, I am still in love with wonderful Copenhagen and Denmark.

My blog will be about the beautiful country of Denmark; its people, its customs and traditions, but it will be mostly about the food. You may have heard of the New Nordic Kitchen. It is a whole new way of cooking. However, all my recipes will be simple to make, realistic and achievable.

In spite of a long tradition of Danish cookery, the Danes discovered other cuisines when they began traveling in the beginning of the 1960’s. The only food you could get a hold of by the time I arrived in Denmark was Spanish, Italien, Chinese, and well, just about anything that wasn’t Danish. I jumped on the wagon and after getting a Danish education as a nutritionist, I began writing cook books in Danish. I wrote 22 cook books about American dishes before finally writing about Danish food. My first book in English “Dining with the Danes” I wrote 18 years ago and it has all the good old fashioned recipes that people never seem to get tired of.  My latest  book in English “Modern Danish Cooking”  has a mixture of the most popular Danish dishes and many new ideas based on the New Nordic Kitchen.  “Dining with the Danes” is available on Amazon.UK. and “Modern Danish Cooking” will be available in May 2014.

The cooking of Denmark has changed in the past 10-15 years. The Danes are now saying use only local ingredients. We have such rich and diverse foods to choose from. Why go elsewhere? If we use seasonal ingredients, we can live better and in harmony with nature. Good food is meant to delight and give pleasure; therefore we will prepare healthy food rich in grains, fish, fruits and vegetable – without being bland.

Many of the traditions and customs of Denmark will be included in this blog as well as many new ideas, based on the same principles of the New Nordic Kitchen. I will do my best to use ingredients that are available in other parts of the world and not just in Denmark.

    I needed to make an Othello cake for my girlfriend’s birthday. It is her favorite. She is from Kolding, DK, but we live in the Netherlands, and I’d never even heard of it, not a clue about how to make it. I followed your recipe and it was a great success. It really made her birthday that much more special! Thank you very, very much!
